I made my dough by making my own sugar syrup (melt sugar in pan until caramel forms, add boiling water, cool until room temp.) and then mixing it with flour and gingerbread seasoning. Dough came out very nice and dark.

But this isn't half bad aswell.

Love the idea of using freshly ground ginger, most recipes ask for just the regular dried stuff. It's March but sod it next time I bake cookies I'm gonna give it a go ginger bread easter bunnys perhaps.
