I am going to make a wild guess as to the fish she spoke of (at 0:06): mullet, tile & bream? I hadn't heard of those before. We use pike, whitefish & carp.
good recipe but i would add baking soda to the fish to make them fluffy,and some chive or parsley ,to the broth i would add some leek and a bay leave .

Reminded me of my mother (and my mother's gefilte fish)..except she used an old fashioned meat grinder instead of a processor.
