  • @Torbyz pork belly is not bacon.  bacon is cured and smoked. pork belly is raw

  • I do not believe that is the reason. Canned broth is easy too, and tastes much better. I've noticed it with many of the Japanese chefs on YouTube. I'd like to hear from one of them.

  • Why does this chef, as she does in other videos, use instant broth powder instant of canned or fresh stock or broth? It seems odd with this otherwise accomplished chef.

  • @llamov Probably because it's a cooking show and to cater to the masses (people who do not have the time or rather use instant stock for convenience).

  • @llamov wow i've never thought about that until now, but as far as i know, theres no canned stock or broth in japan. liquid stock is sold normally in a pet bottle but i've never seen one for chicken stock. i guess she doesnt make fresh chicken stock here because it is just simpler for wide variety of viewers. and while i agree that its healther and tastier when making stock by yourself, doesnt change much flavour with all the other ingredients after all i guess.

  • This. Was. Delicious! I had to switch some ingredients (button mushrooms for 'shrooms and smirnoff instead of sake...) but it was sooo tasty all the same. The broth was heaven. It was also quick and easy to make. Thank you so, so much for this recipe!

    No no no it just seems a bit plain.

    I usually sexeh my noodles up using stock in the water, along with chilli paste and garlic.

    Hot water alone is certainly functional, but a tad amateur.

    I was aiming at juxtaposition regarding your plain water approach..... nvm.

  • I have to admit I'm not a chef far from it. Is the "long green onion" the same as a leek ?? or is it different. I am assuming that the name might vary where you are located.

  • @Zabybos Based on visuals, I would say that "long green onion" is a leek.

  • @KopyWut It is not the same. I'm Spanish and for me leek is "puerro" and this long green onion from the video is called "calçot". It is not leek, it is a long onion with onion flavour, not leek. I think =)

    From my understanding, long green onions are long and thin and have more green, pretty much is a scallion. Leek is what she was cutting in the video, though that leek is very small.

  • @HappyXHaineko: I've tried Tsukemen using slightly-fatty pork meat from the shoulder part of the pig. It works well enough, as long as you 1.) don't saute the pork too long (there may not be enough fat in shoulder meat to melt and "protect" it from overcooking too soon), and 2.) add a bit of pork broth boullion to the soup in case you find the resulting "porky" taste weaker than it ought to be (because you didn't use the fattier pork belly slice).

  • i dont understand:..you rinse and rinse the noodle then put on cold water dry it really good then put on hot soup.i just dont get it.

  • @edenrdrgz It stops the noodles from cooking, and keeps the firm texture. Even after you take something out of hot water, the fact that they are still hot means they will continue to break down. When you add the cold noodles to the hot broth, it just warms them up, not necessarily cooks them any further.

  • @MsYaguro: To make a soft-boiled egg: 1.) Make sure the egg you're cooking is at room temperature (NOT cold). 2.) Pour in enough water inside a cooking pot to submerge an egg about 3/4 of the way. 3.) Place the pot on top of medium to high heat, and bring the water to a boil. 4.) When it boils, gently place the egg in and cover the pot. Let cook for 3 minutes to 3 minutes and 30 seconds (to be exact). 5.) Remove the egg and carefully peel off its shell in a bowl of ice-cold water.
