  • Why would anyone want to play racket WHILE they are trying to be heard on video ? Couldn't hear you tell about the subject at all . I'm going to look up blue grass music and see if I can "over hear" them talking about canning butter.

  • I don't usually make negative comments on videos, don't wanna be a hater or hurt someone's feelings However, several of your practices are unsafe and unsanitary. There isn't room to correct all the errors. While I am a huge youtube fan, preserving is not something to learn on youtube. Failure to sterilize and maintain that environment can be DEADLY. Buy a book or go to your county extension office to learn preserving. PLEASE BE CAREFUL !!!

  • there is a simpler way: simply put the butter( even solid) in the can and then in the microwawe oven and add butter until completely full. Close and put all the cans in a pot full of water and kkep the fire running . They must stay at least a quater of hour at 100 Celsius degree for sterilitation and are ready to be stored in a fresh place far from light.

  • The goal is NEVER to can cheaply. It can be DEADLY to do so! Please be aware of this. I would rather spend an extra several pennies of gas to be able to think I killed off deadly bacteria that will kill me.

  • So you are not canning butter, you are really canning "ghee" which is a super clarified butter PRODUCT, but not butter in itself, which still has it's milk solids. Ghee has it's milk solids boiled out of it. ;-) Thanks for a very good video!

  • i enjoyed this so much! i never thought of this! when u said u were just learning 2, this was 2cute. we are all just trying, n when u r bold enough 2 try 2 help others learn 2, that takes courage. honesty=the best policy. btw, i was reading some asian cooking books, they heat the butter 1st to clarify it 2 make the butter withstand higher heating 4 stir fry cooking. so, BONUS! i have no clue about this, but i would think it makes sense that jarred butter would be superior 2 heat as well!

    By the way and not to give away my age. My Grannie used to have us kids turn the butter jars as they cooled. Then store them in a adobe spring cooler. and your right. It is about storage space not freezer space.

  • @bowler8 Because butter really doesn't keep. It can become "rancid" or "go off" as my grandmother calls it. Canning is an excellent way to preserve butter without using outside energy sources. There are several ways to can butter, however, and I personally use the "long" method, using pressure canning. Just my preference. Either way, Butter will keep until needed if canned.

  • If you shake the jars of butter a few times after the lids pop the butter will not settle out as bad. It also makes the taste more consistent from start to finish when eating a jar of home canned butter.

  • umm. I think they are called.. JARS.. that's JAR's in the oven.. not cans.. cans are metal.. canning is the process.. JARS are what you use to hold stuff during CANNing.. :)

  • what you need to do is just melt it then let it settle and remove the fat from the milk solids (to make ghee) then you can almost heat it to canning temps without burning the butter and removing anything that bactiria can live in, you will be left with nothing but butter fat (ghee)

  • I see one major issue. When butter is made commercially, it's pasteurized (some ultra) which means heating the milk/cream to a high temp to kill their version of bacteria in the milk. This process by then, has already destroyed the crucial enzymes necessary in the digestive tract to work with normal gut bacteria. In other words, they add back into the dairy products synthetic Vitamin A, D and Calcium. So, when it's required to boil the butter, you've just made it with -0- nutritional value.

It's just like a video I watched from Bushcraft, supposedly healthy recipe for cheese, uses fresh cows milk she gets from her cow, goes though all the trouble of not getting it to hot, but putting it on the stove to separate the whey from the cream, gets the cheese into a ball, and to start working it puts it into the microwave. 'wrong'. Microwaves scramble molecules, rubbing together to heat fast..but then destroys them. So why bother? No need to ans

  • Just a note you are refering the jars as cans. Think...

  • My only concern with this would be the risk of botulism food poisoning. Butter is not an acidic food and could harbor botulism bacteria. Don't risk your life by eating canned butter stored at room temperature. Just freeze the butter, or get powdered butter, or use oil as a substitute in an emergency situation.

  • @utahstaterocks A sprinkle of food grade Citric acid should take care of any botulism, and not affect taste also the jars have been sterilized im sure, just pre heated in the oven for this instructional video. Very good points of concern though :) PEACE

  • It's a good step in the learning process, but never go do something without consulting multiple sources. There are good Youtube sources for this. thecookingdiva makes ghee in the oven with a cast iron skillet. vahchef shows how to make flavorful ghee from homemade butter (it's a slightly different process than this one that shows storebought). Singe690 shows how to make probiotic ghee from yogurt made from full-fat cream.

  • She is making ghee. If you get all the solids out, it will keep in an airtight container for about a month without refrigeration, even without a canning seal. During the winter, if it's cold, it will keep longer.

  • Helpful vid. We use the foam and 'cool & shake' method. One safety note-when you took the jars from the oven, you put them right on your cold ceramic countertop and they could break. Always put hot jars on towels or newspaper :)

  • To the comment in regards to why not just freeze. If one has lots of butter and if one doesn't have spare freezer space, then canning makes sense. This isn't necessarily for small families or people who live in cities. Also people who have access to a lot of butter via their own livestock. Try and remember there are people who outside your life style.

Remember: where there is no electricity, there is no frozen butter or anything else for that butter....I mean matter. (:

    here's a thought....even if you can the butter and it sits on a shelf for lets say two years...and you open it and find a little mold...i woulf think it could be cut off and then boiled and re pour for imeadeate use

    yes I am ideal world freeze it, but it's always good to think of the what if's and what would you do...prepackaged emergency food is expensive, this is a good alternative=)

  • @nasyaw hey im done this many times and i have tested this when its canned it lasts for alot longer than freezed butter and it just a jar witch you can just put it in your cabinet and its purified butter witch is PURE butter it just tastes better.PS i think that they last for around 2 months in the jars and only 1 week in the freezer hope it

  • I don't think it's a good idea to put the glove finger in the jars after they were sterilized. No matter how clean the glove is.Same with the lid I'd boil them or at least put in the boiling water.When the canned butter gets bad,it has mold on it.When you use the butter, you should only use clean and dry spoon.Otherwise you will cause bacteria growth in the jar. Hope it helps :)

  • I can veggies,fruits and meats-etc-did not even know u could can butter-next time it is on sale I am going to try it-but will pressure cook i think for 10 min. i make jar breads and seal them this way-you bake in oven then take out and put on lids and rings-it seals and does not spoil the bread inside-has never lasted more than yr but is safe to do with quick breads-good video-but use towel to set stuff on

  • I did butter like this and in went bad. You need to remove all the butter solids to have this work. This method is a great way to get a lot of people sick.

I never can items where one uses the heat from the product to seal the lid. I would pressure can butter in 1/2 pint jars at 10 lbs for 60 minutes. Butter like meat has fat and fat can cause sickness if not pressure canned. So many unsafe ideas in this video.

  • @MotherLodeBeth If you boil off the water content of the butter the water activity will not be sufficient to promote botulism growth. While botulism grows in anaerobic environments, it will not grow if there is not enough water.

  • Pressure canning would make this safer, since butter is alkaline, against botulism and other harmful bacteria. pressure canning as always recommended when canning anything that doesnt have a lot of acid in it, such as meat and milk products.

  • Observation: Lids were not boiled and sterile. Used hands on lids. Butter not boiled for 20 minutes to remove all water. Butter not boiled at 240f under 10lbs pressure necessary to kill botulinus.

  • I missed something.. I love canning but why butter? It freezes well and it is available or if you make it from cow's milk.. it is available daily.. I am not being rude.. I just dont understand the reason for canning Butter.

  • This is dangerous because you're not totally getting all the impurities out. It takes 3 processes to get all the fat out .It takes hours to do it correctly. By the time you've done all 3, the ghee looks like oil. Totally clear and golden in color. You should take one of your older ones off the shelf and see if its still good. Look into " How to make Ghee". The video is also here on YouTube. Until all the fat is out, its not safe to keep on a shelf at room temperature.

  • Great vid. I might suggest boiling the lids and rings and not touching the insides of the jars. I tend to be very cautious with canning anything.

My children just love it! and I've learnt so much on my own about salted and unsalted....So just wanted to shout out to you that I will never eat butter any other way but this way.

  • Another reason to make Clarified butter or Ghee, it that when you cook with it it does NOT burn like cooking with regular butter. please search "how to make Ghee" and you will understand what I am trying to say here.

  • the reason you take the foam off the top is because it contain dairy fat, you have to remove ALL of it for SAFE canning of clarified butter. You are actually making Ghee. Before anyone tries this you should what videos of how to make Ghee, that is safe to can. Again you have to get all the stuff that floats OUT. You can use it but not CAN it.

I know clarified butter is great for a lot of reasons, and can be expensive, so making it yourself would be a good idea. Again, no offense. I can a lot of stuff, myself, but have never had the need or desire to can butter, so I'm genuinely curious... No need to be abrasive.
