Hi Keiko. Great recipe thank you very much. Mine comes out great with the exception that the top middle part is still very gooey from the chocolate. This makes it very tricky to cut in layers and of course ... remove the top layer without it breaking it. I fear that If I leave it in longer, the outer edges will go dry. Any ideas as to where I may be going wrong? Thank you.
@tavrion Did you bake a larger cake? Increasing the baking time should fix the "gooey" problem. If the cake gets dry on the sides, you may need to decrease the baking temperature slightly. Good luck! :)
@ChefDePatisserie I did bake a larger cake! I probably should have mentioned that. : ) I used a 21cm baking pan and the factors you supplied. I`ll try what you suggested with a lower temperature and longer duration. Once I see the cracks forming, I just want to take it out. : ) Thank you very much for the tip. This cake is to die for, even if mine is still a tiny bit gooey : )
@KalerTerang The cake is not as "fluffy" as a normal sponge cake. If you think that yours is too dense, still, then it's most likely because you overmixed after adding the meringue (egg white).
@KalerTerang After you bake it, flip it over!!! This is a mistake I figured out after 10 cakes..... I had to make 3 cakes just for 3 layers, that's how deflated they got.
I was away and did not have time to check my mails ,now after seeing your mail I went to the link here.Thx4sharing.Great tutorial as always.Best regards to you the Master chief.
@ChefDePatisserie Where do you buy glucose? I go online but all I get is glucose meters *for dibetics and stuff * and glucose sugar pills *to lower glucose levels*
@michelle13579123 If you can't find glucose, you can use corn syrup instead. You could also make the cake without the glucose. The ganache will be a bit less shiny and smooth but the cake will still taste great. ;)
I purchased the package with 8 cake recipes off the website and they are ABSOLUTELY INCREDIBLE! I cant WAIT to try the Blackforest and swiss rolls -- seriously the best cake making Ive ever seen!!
@AmielDionisio It depends on the bowl you use (size, shape, metal or plastic...) - I put mine in the fridge for about 30 minutes. Then, check the consistency.
@alfonstip That is because the milk solids will effect the recipe results. Same goes for chocolate bars and chocolate chips (since chocolate chips were specially made to hold their shape while baking). : )
@alfonstip i dont see how it will be that different, maybe just in taste. you might need to adjust the sugar amount...but anyway, just my speculation :-)
you, shut the fuck up, its a nice cake, waay better than what you could ever acheive so take her advice and get better or fuck off, ye? keep up your receipies :)

Keiko, I followed your recipe, but my cake didn't rise like yours, it was so dense. Before I baked it, the batter looked so thick.
