The main theme is "The Egg and You" by The Seatbelts (It's a Cowboy Bebop song), the time lapse music that interrupts it is "Welcome to Rapture" by Garry Schyman (a song used in the video game Bioshock).
Very cool video, especially the time lapse part. I'm working on a wheat ciabatta recipe of my own (similar to this one). I think after watching your video, I may cut down the 18 hour rise time to more like 10 or 12. In watching the time lapse, it appears the dough doubles then continues to kick out gas. That gas is the yeast eating up all the tasty sugars in the dough!! :-) Either that or perhaps retard the yeast by letting it rise over night in the refrigerator. Well done on the video!
