Feta is one of those cheeses I feel quite neutral about. Their is nothing too special about it. It boasts no flavor that I find particularly stimulating and is very much akin to a hardened form of Greek Yogurt (ie sour tasting). I do like though in some applications, but if you're talking Greek cheese, I would take haloumi over feta any day, as its one of the only cheeses you can fry that won't melt. On the burger, still not quite a burger I'm afraid. More like a lamb loaf.
@danieldelaney I don't mean to be a jerk, but words matter: A burger is meat, plain meat. Go around to all your favorite burger spots and ask what they put in them, prepare for a puzzled look because they don't add anything! A burger is simply meat that is salted and maybe peppered on the outside, hopefully not the inside. A meatloaf is what you made here, flavorings and salt and pepper inside. Really the kicker is the S&P, which totally change meat's texture by adding them to the mince.
@thePowerPlant Salting meat beforehand denatures proteins and causes them to unfurl, think like pulling apart a spring. Then the heat from cooking causes them to constrict again, but not separately, like they once were. They end up linking together causing the meatloaf like texture. I am not attacking what you made here. It definitely tasted good, but its classification would not be of burger, but of meatloaf. That's all I am trying to say.

And a traditional hamburger is always beef, and is seasoned minimally. But, I think that the term "burger" as opposed to "hamburger" is now used more and more broadly to include patties made of vegetables, other proteins, and include other fillers. It's the vehicle that makes it a burger, regardless of what's in it.

What is so wrong with wanting to keep it that way? These salmon, lamb, goat, turkey sandwiches are fine, but they are not burgers, they are loafs. Burgers don't have additional things added to the mince, just meat, but look at meatloaf, anything goes! So when you have something that is not beef or beef with other stuff, its a meatloaf.

I have come upon feta made from cows-milk as well.
It is not as good as the goats milk variety, but it is still very tasty and seems to be cheaper :-)
