Can I offer a suggestion for the cheese cake burning. I use a large deep well pot that my spring form pan fit in. I wrap the pan in tin foil to just its lip so no water can get in the pan. Follow the recipe just fill the outer pan about 1 half the spring form pan from its top with boiled water. Bake as to recipe. Allow to cool for a half hour before removing from the water bath. Remove tin foil and cool completely then refrigerate overnight and serve the next day. This may help with burning.
I think the burntness of the cake makes it look so pretty .. im definitely going to do this before February .. im gonna make a cheesecake in 45 mins just not double layered .. also you could brush the sides of the cake to make it glazy and it is also tasty
I think if the cake is burnt to a point where it tastes bitter and looks black then it is not a good thing...but some browning is nice to have on the sides of it.

this is amazing! when you layer the cheesecake, don't you afarid it's going to fall out? or crack?

carine, when you bake this type of cheese cake it is solid and holds up well, so it will not fall on you
if it cracks, its ok, you are going to put the top layer on it anyway, and you can always cover up all the cracks with any topping of your choice.:)
