I was just wondering if the mixed veggies that you used were boiled before you grated them. Also I had pressure cooked all veggies together and I found it very hard to turn them around when I tried to fry them as they kept breaking :(
The mixed veggies were not boiled. Usually, frozen veggies, especially when you chop them up like we did, cook very fast. Regarding the cutlets breaking, try a starchier potato like russet for more binding powder.

I made these yesterday with cauliflower and peas as my veggies, and I omitted the nuts, and OH MY GOSH was it delicious. Mmm!!! I can't wait to make it again and again for everyone I know!

Chaat masala has a completely different list of spices than garam masala. You can find chaat masala at any Indian grocery store.

If the mixture sits for a long time, the vegetable tend to swet because of the salt in it. Try adding more potatoes (starchy).

Paneer is a homemade cheese that doesn't melt when heated. You can make it at home (we have a video) or buy it from the Indian stores.

The veggies are chopped very small in the food processor so that they cook fast in the cutlet. They are not pre-cooked.

you can try tofu as well..
i made these today with tofu cus i always that on hand, worked out fine. just make sure its extra firm and a little frozen before pulsing it!
you can try cottage cheese as well but as i havent tried it i cant say anything about its texture.
ps - i made these into little balls, just like meatballs and used them in a curry gravy!
