  • @downtownballer07 Thanks for your comments. It's interesting that there is a group of people who think that they are experts and want to knock my videos. There are many different variations of drink recipes. My videos are one only of them. I use ingredients that are easy to find.

  • @jtiano - mate have you watched your pouring technique??? i'm coming into your bar for one reason only... drinking a neat scotch so i get half a bottle for the price of an ounce... learn to pour, learn to shake, learn to research your recipes, learn your history of your products, and for god's sake get out from behind the bar until you know what you are talking about... amateur!

  • There are over 25 different recipes for the Mai Tai. This an easy simple one. We have other 1 other video recipe from Trader Vic. Check it out, I think you''ll like it.

  • you are good. I'm not an expert, I'm a bartender for only 2 months but I make Mai Tai with white rum, black rum, ogreat, pine apple juice and a little lime juice.

  • malibu bacardi oj pineapple swirl of grenadine float dark rum garnish with an orange and a cherry. thats how I was taught. have never heard of this recipe

  • BLECCH! Educated bartenders know that that is NOT a Mai Tai. Not even close. Sorry. If this is the junk they are teaching at the American Bartenders School then they clearly do not know what they are doing. You would think that, of all places, a bartenders SCHOOL would know some history about the Mai Tai. How embarrassing.

  • So what makes you such an expert? There are over 25 different recipes for a Mai Tai, this is only one of them. We choose it because the ingredients are easy to buy.

  • Finding Orgeat can be difficult but there are ways to do it. Just visit fee brothers website and order it online. Not the best orgeat in the world but by far the easiest to get, and its definetly worth it. Nothing beats a well made Mai Tai, oh and don't forget to garnish with a sprig of mint =)

  • Woah,way off. The BeachComber made a drink like this called the Mai Tai Swizzle pre Trader Vics version but it dissappeared from his menu after a year. The real Mai Tai is:

    2 oz Aged Rum (The original 17 year J Ray and Nephew Rum is no longer in production so Appletons 12 is good instead)

    1/2oz orgeat

    1/2oz curacao

    1oz Lime juice

    Splash of Rock Candy Syrup

    Shaken and strained onto crushed ice

  • you're correct but we don't teach this recipe because most bars don't stock all of these ingredients.

    This is a shaken drink, you must shake this drink. you also can't have this drink without the dark rum, its not optional, it's required.

    Grenadine

    Orange & lemon juice

  • It's supposed to be, but if you buy a bottle you'll probably just get red colored syrup, which is why you should always make your own grenadine.

  • @bartenderjay Well...grenadine is supposed to be made from pomegranates, but most store-bought grenadine isn't. Either way, it doesn't belong in a mai tai!

  • Grenadine actually means pomegranite (which are native to Grenada).

    Traditional Grenadine syrup:

    Squeeze 1 cup fresh pomegranite juice (you can use pom if you prefer)

    simmer over low heat and add  2 cups good sugar (I use demerrarra sugar to make mine) until desolved

    add 1 sprinkle hibiscus blossoms (to darken color)

    1 tsp pomegranite molasses

    1/2 tsp orange blossom water

    bring to a soft boil for 2 minutes

    chill and strain

    You can add a shot of overproof vodka to keep it longer also

SHAKE it heres my mai tai 1. 1 oz golden rum ( such as havanna club 3 years) 2. 1 oz dark brown rum ( such as myers) 3. 1.5 oz FRESH lime juice 4. 0.5 oz of almond sirup 5 0.75 oz of triple sec Shake and strain into a glass filled with crushed ice. if like you can flot a little bit of high proof rum!

  • Recent studies show that bartenders who free pour (don't use a jigger), over pour by 28% more than the recipe calls for.

  • very true but with proper training you wont need the jigger. for me i went to bartending school my count is perfect thats one more good thing about bartending school they make sure your count is perfect before you graduate :)

  • @jtiano I noticed when you use the jigger, you also pour a little bit from the bottle while emptying the jigger. Is that because you can't completely fill the jigger itself?

  • It's an old bartenders trick. You pour into the jigger aboutg 2/3 of the way full and than keep pouring for a few seconds. The customer thinks they're getting a bigger drink than they are.

  • @BigC954 those people that CARE about their guests being served a well balanced cocktail use jiggers. Those people that CARE about their boss' price calculations do. Douchebag bartenders who want to act cool don't. There's no problem in using a free pour if you have absolutely mastered it. But it's mighty hard to stay consistent in your free pouring over the whole evening.

  • @BigC954 I use a jigger at home because I like my drinks made right. The original recipe is made that way for taste. So I will measure. I hate when bartenders free pour. The last bartender got me way to drunk by over pouring his hard liquor and I had to call an early night.

    poco glass filled to the top with ice

    15ml rum

    15ml bacardi

    15ml orange curacao

    15ml Amaretto

    and top with orange and pineapple juice and a 15ml dark rum float with the cherry on the side of the glass not in it!

    Laugh apart, just so you don't get it wrong (once again..): I spent quite a few years behind REAL BARS, working with REAL BARTENDERS, who taught me REAL RECIPES, using HIGH QUALITY SPIRITS. How far did that get me ? At 33y, GM of a luxury resort... But I did miss out on the now world-famous BARSCHOOL you work at. So should your students...

  • The more authentic, minimal 1950s mai tai:

    bucket glass filled with crushed/shaved ice

    1oz light rum (Bacardi)

    1oz dark rum (Myers)

    1/2-1oz orange curacao (not triple sec)

    top with fresh sweet&sour

    lime juice and/or orgeat syrup is optional

    shake or stir and serve with a pineapple/cherry/silly and/or silly umbrella to embarrass your friends and family.

    Enjoy!

  • Orgeat syrup is not optional; mai tai's require an almond element. Orgeat can be replaced by almond syrup since orgeat is harder to come by.

  • So you REALLY want to make a more authentic, minimal 1950s style mai tai? If you do your research and keep all the extra bullshit out like grenadine and pineapple juice here is what you get basically:

    -bucket glass of ice (snow cone crushed if you can)

    -1oz white rum (Bacardi)

    -1oz dark rum (Myers)

    -1/2oz or 1oz Orange Curacao (to your taste)

    -freshly made sweet&sour (lemonade)

    -squeezed lime and 1/2oz orgeat optional

    you can shake and pour or just stir in the glass and you're done. Enjoy!

  • the recepie iv got is - SHAKE wray nephew, a golden and light rum with a dash of almond syrup, a couple squeezes of lime and grand marnier topped with orange and pienapple shaken. then drop grenadine through and float woods navy on the top. The exact measurements are up to you, although be careful of making the drink too sweet. This guy needs to take more care - always taste what you are making and garnish with style!

    The ORGINAL recipe was made in 1944 and cemott3rd paste it write.

    In my country i cannot buy those orginal drinks so i make it:

    30ml light rum

    30ml dark rum

    15ml tripple sec

    15ml almond syrup

    10ml grenadine syrup

    15ml fresh lime juice

  • Yes, I agree with Trader Vic's original version.

    Use orange curacao not triple sec. Orgeat not almond liquor, lime juice period. No OJ, Pineapple juice or grenadine. Don't forget the fresh mint.

  • that is the actual recipe. however, most bars don't carry orange curacao or orgeat syrup, so this is an acceptable and very common alternative.

    Don't get confused and think i am sticking up for this guy. I do not think he should be running a bartending school. many of his many of his recipes are wrong, and no PROFFESIONAL bartender uses a jigger.

  • EVERY real professional bartender uses a jigger! Cocktails are chemistry and if you don't get the proportions correct, your cocktails wont taste right! I know how to free pour but don't because you can always make mistakes that adversely affect the taste of your drinks. When using a jigger, I KNOW that the proportions are correct.

    That being said, the rest of your comment is spot on: this guy is a tool and should have NOTHING to do with training people in the craft of bartending.

  • Ditto, grenadine is a common spoiler of Mai Tais, along with orange and pineapple juices.

  • According to the inventer of the Mai Tai Trader Vics this is NOT the recipe. THIS is the ORIGINAL recipe: 2 ounces 17-year-old J. Wray Nephew Jamaican rum

    1/2 ounce French Garnier Orgeat (almond syrup)

    1/2 ounce Holland DeKuyper Orange Curacao (triple sec)

    1/4 ounce Rock Candy Syrup

    juice from one fresh (key)lime

    Hand shake and garnish with half of the lime shell inside the drink and float a sprig of fresh mint at the edge of the glass.
