MGS2 Substance has some bonus VR missions, a skateboarding minigame, and "snake tales" - some what-if missions staring Snake. Not too much different from the original.

MGS3 Subsistence (not substance) has a completely redone ingame camera system. The 2 disc version also features some hilrious comedy cutscenes, and the original msx games.

There are many differences, in Substance there`s the complete Sons of Liberty game+VR missions (many VR missions)+Snake Tales (stories that aren´t cannon, but puts Snake in situations where we play as Raiden, like the fight versus Solidus etc.)+a new dificulty mode, if youy buy the PS2 version of this game it comes with a demo of a Skateboarding game where you can play as Raiden or Snake.and I that´s all.

Plus some very few changes with dialogue, like Solidus referring to Raiden as "Jack" instead of calling him by his codename and Fatman scene has like a three second long cutscene where you just hear him falling onto the floor at the end of the battle. There's a few other very minor changes to the cutscenes too (and by minor, I mean ones you'd never notice unless told).
