one suggestion, try scoring/cutting the flesh so that the glaze can bake right into the meat. also, for a chinese spin on the glaze substitute in soy sauce or oyster sauce.

I must admit sushi is not my expertise. Sushi chefs train for many years to become experts. I will put it on my list and at some stage possibly have ago.

I nearly always rinse my meat; with chicken I also like to rinse the inside as well. It's just something I have always done and always will.
I don’t think you have to wash your meat, and if you do you have to be careful not to make splashes water everywhere otherwise you get cross contamination.
I just prefer to know that my meat is washed before I start cooking.

I did have a look around on the web and have not been able to find an alternative as yet. There were some recipes offering the ingredients to make it up. Maybe with a bit more searching there may be a supplier of Wooster sauce in Australia. Possibly an online supplier in Australia?

When I removed the pan from the oven, I poured some of the juices into the bowl and then poured the juices back over the chicken :)

My recommendation is to try this recipe first as I have done. If then you want an extra kick then maybe add some cayenne pepper.
