That part of the test did not work so well, so it wasn't used in the real film. That's why effects artists test things before spending the studio's money on the real thing!

I've never heard of Mocha. It really doesn't matter anyway, since I'm years beyond this project. Again, it was only a test, and it proved exactly what it needed to.
@StillFramePictures When people get shot in the head they drop straight down the second the shot hits their head. Then they kinda fall back when they hit the ground.
Also, when people get shot in the head, then make kind of like a labored, growling exhale. The blood effect looked really cool.
Record your blood splatter (compressed air and fake blood) against a solid colored surface you can chroma or luma key. Then, record your actors in your scene. Keep the camera movement to a minimum if you are just learning how to do effects. In your compositing program, motion track the blood footage to your background. Then, key the blood footage so you just have the splatter remaining. Last, rotoscope the blood footage frame by frame so it appears behind you actor. Easy!
And if all that still seems too confusing, then your best option is to just rig a tube filled with fake blood on your actor, and then shoot it out with a QUICK burst of compressed air. I used a CO2 tank with a manual valve.
It was composited in Motion 3, part of Apple's Final Cut Studio package. Any compositing program with keying and match moving could do it though. The blood splatter was recorded practically, and then motion tracked into the footage with the "actors."
The original blood footage was done handheld (unfortunately), so I had to stabilize that footage before I could composite it. Since there was nothing solid in that footage for the stabilize feature to lock onto, it could not do as well, hence the flicker. See my "Gunshot test 1" video for the original blood footage.
