Oh man.. I'm going to have to give this a try. I've got some asian based broth, green onions, fish balls, and no noodles in the house. Guess that's not a problem any more though. Look forward to the experience. A quick question - can these noodles be made a few days ahead and stored? Maybe dust them with a little flour to keep them from sticking and store in an airtight baggie in the fridge?
I've been trying to do this for some time now, but I can't even get the kneading done correctly. It never gets to that "smooth" stage where you can actually pull it. Going to try once more tomorrow.
@JaOrhoj It is tricky! It took me a long time to get it. I sell a noodle kit that comes with everything you need to make 2 batches of noodles. Sometimes it helps to work with this product because you know it will work. Let me know how it turns out. cheftomm com
@cheftomm I failed again. I can keep kneading for an hour and I never get to the point where it can be pulled. It is quite frustrating. It's not a 100% loss every time as I can roll it and cut out the noodles but that's not as interesting.
@JaOrhoj I'm having the same problem. I'm using the recipe from your website Tom, and I spent about an hour and a half kneading and it wouldn't get to the pulling point.
@leonjerry The gluten amount. If you follow the ratio you will come out with the proper amount. There are lots of recipes for this with different flour. Have you tried making it yet?
@leonjerry Semolina flour won't work so well but AP flour will work but you will have to work it more. I sell a kit that has everything you need to make 2 batches. This may help you get the feeling of it. They are at cheftomm com if you are interested.

It looks amazingly simple, but I suspect it isn't :). When you are pulling it, it appears that the parts at the end (in your hands) are joining back together, making a noodle 2 inches in diameter.
Is that happening, or am I seeing it incorrectly? If so, how do you prevent it? More flour? Cut and discard that part?
@blogegog It is kind of tricky! I have made a noodle kit for people who are interested. You can find it on my website. You are seeing correctly. What happens at the end is I cut the noodles away from the end and reuse it with my next batch. This is fairly common with the noodles. Thanks for writing.

Those are some long noodles. Just don't try to slurp them like you would in Japan.
