Can you prepare the exact same way, but instead of steam, can you bake it? I plan on making Seitan in bulk for a regular staple in my vegetarian diet and all I have is an oven.
How about a pan of water in the oven below the seiten? Or a steamer basket? This video is useless to me unless I have a way to make it this way at home...and I'd sure like to. This looks like the yummiest batch of seiten I've seen yet.
Wait, I'm confused...so we're not baking this in the oven? Can you recommend another way to that I can steam the seitan at home besides an industrial steam oven? Thanks. : )

@strangeromance1 Hi, thanks for your comment! Yes, that's an industrial steam oven, they have an apposite water compartment which has to be filled before use. There are steam oven for home use too, have a look at your favourite home appliances shop (they're not exactly cheap though...).
