Im not the best modder honestly, but I do have some ideas im trying to figure out to work it out. One easy thing you could do is lower it to bedrock level so that your depth field is lowered by its self and I do know how to make items in game if you wanted something like the RoA or MBR so i will try to work on this in my free time.

A trapped Ghast would work for the Turrets with modified health. Would just need to change around the scripts or commands of the mob tho, and make another version of the mob so that the other team may have the same aswell

I think with current mods the turret system could be made. You could have the Turrets be made of Obsidian, and you would just have to have a Diamond pick or a pick to destroy it. I dont know if there is a mod, but It could take into consideration of how many times the block has been hit in total to how many it takes to actually break the block and such. As for the Turret hurting people? I have no clue on that. Same with Minions
