Go for an Mbox 2 from digidesign if you want something cheap and only need 2 channels. That gives you phantom power and pro tools LE 8.
If you want to burn some more money and want to do multitracking go for a digirack 003 with 4 preamps or 003+ with 8 preamps.
As for the sound, make sure the gain on the preamp brings the overall level high enough. Try to keep it at between -12 and -6db with faders at 0bd. This reduces the noise because the only gain is right in the beginning. Then you mix xD
003+ is a great interface, im planning on buying one of those or a Motu are also very great preamps too, the 8 channel rack is a great preamp and high quality interface. the only problem is the connection to the protools, cuse i think it doesnt match :(
The problem with USing Pro Tools with something other than a digidesign interfae is that it wont start up. Pro tools is hardware dependent so you would at least need an Mbox micro. BUt after that the motu should be able to work within pro tools.
