I tried this, and it didn't really come out right. I guess it's been a while since I did pan-fried chicken. But I been looking for another recipe video, but I have been unable to find it. I think it was Bobby Flay but it might be from another show. It was a similar recipe to this, but he soaked the chicken in a buttermilk and hot sauce mix. Anyone seen it?
Once upon a midnite dreary, While i pron surfed, weak and weary over many a strange and spurious site of "hot xxx galore" While i clicked on my fav'rite bookmark, suddenly there came a warning and my heart was filled with deep mourning mourning for my dear amour "tis not possible!", i muttered, "give my back my free hardcore!" ... Quoth the server, 404

A cookbook that cotains the recipes to all your favorite meals from your favorite restaurants? Yes, its true! Cook them all today! - youtube.com/watch?v=6ktnVmKZXOo
Once upon a midmorn dreary As I pondered with eyes quite bleary Over many curious volume of culinary lore On a latte I was sucking Yet suddenly there came a clucking As if some salesman were a-mucking Mucking bout my kitchen door. Tis a salesman, only this, nothing more And yet presently the noise repeated So I hollered no longer seated Beat it, pesky husker, mucking 'bout my kitchen door At my business Im now working So my chain youd best stop jerking
Then, throwing wide the kitchen door I found a chicken, nothing more Lept back I then with a stutter As the phantom bird did with a flutter Mount the folk-art bust of Julia Child there upon my kitchen floor Perched and sat and nothing more Then the pallid poultry most perplexing Did set my meager mind to guessing "From whence did you come to perch upon the bust of Julia on my kitchen floor?" Quoth the chicken, "Fry some more"
As certain as my heart is tickin' I'm certain that no living chicken Has ever clearly commanded a living cook before With an utterance so clear and shocking that even I could not ignore Quoth the chicken, "Fry some more" Then thought I, perhaps she's onto something For too long now I have been supping On feed incapable of nourishing my anguished soul Perhaps some truly good eats my hungry soul could restore Said the chicken, "Fry some more" Good Eats, that is.
Whenever I feel like friend chicken (which is OFTEN!), I always remember this. A great bit of literature, modified for Alton's effect. HAHAHAHAHAHAH!!! Fry some More!

You really can't. There's nothing that will get you the coating that buttermilk will get you. On the plus side, you can use buttermilk for a LOT of other things. It's incredibly useful for baking and mashed potatoes.
At 1:05 you can see Alton holding the book "On Food and Cooking" by Harold McGee. This book on the science behind cooking is the basis of "Good Eats".
narutogirl105: I suspect there are lots of AB nerds out there who fall for his Thomas-Dolby-wannabe hairstyle, his geeky movie and TV references, his out-there perfectionist ways of cooking even simple things, and his refreshingly snarky personality. There are damned few people left on the Food Network that I want to watch, much less who are able to teach me anything. He is hardly a perfect person, but I enjoy that. So, yes, I love him. I hug his clever brain, and envy his wife, kids and friends.
I wonder why he doesn't use the wings..I love fried chicken wings. When I make them at work I have people fight to have them. It's white meat. And delicious..
Although some of his recipes are the best of their field (apple slow-cooker porkchops were amazing) I still go to other shows for specialized recipes but for Ground-Zero-Basics I always turn to Good Eats. :)
Agreed. I've learned more from this single show then every other cooking show on Foodnetwork. AndyTheSamurai 2 years ago
you can use milk or egg but it wont be as good
alion06 2 years ago
Do NOT use egg. The fat in the egg will attract fat from the frying oil and your chicken will be a greasy mess.
MrKlaw11 2 years ago
works fine with me then again i only pan-fry i never deep fry
alion06 2 years ago
Pro tip: You don't actually need to cut the breast meat off. Once everything else is gone, you can scrape the meat off of the bone with your fingers.
Just run your index finger between the keel bone and the meat and it will come right off, no worries about mangling the meat with your knife.
ghostbirdofprey 2 years ago
Lol I just tryed that and I still messed the meat all up :P Oh well... not gonna effect the flavor so no worried :D
