  • I tried this, and it didn't really come out right. I guess it's been a while since I did pan-fried chicken. But I been looking for another recipe video, but I have been unable to find it. I think it was Bobby Flay but it might be from another show. It was a similar recipe to this, but he soaked the chicken in a buttermilk and hot sauce mix. Anyone seen it?

  • You really can't. There's nothing that will get you the coating that buttermilk will get you. On the plus side, you can use buttermilk for a LOT of other things. It's incredibly useful for baking and mashed potatoes.

  • you can use milk or egg but it wont be as good

  • Do NOT use egg. The fat in the egg will attract fat from the frying oil and your chicken will be a greasy mess.

  • works fine with me then again i only pan-fry i never deep fry

  • Pro tip: You don't actually need to cut the breast meat off. Once everything else is gone, you can scrape the meat off of the bone with your fingers.

    Just run your index finger between the keel bone and the meat and it will come right off, no worries about mangling the meat with your knife.

There are damned few people left on the Food Network that I want to watch, much less who are able to teach me anything. He is hardly a perfect person, but I enjoy that. So, yes, I love him. I hug his clever brain, and envy his wife,kids and friends.

  • Although some of his recipes are the best of their field (apple slow-cooker porkchops were amazing) I still go to other shows for specialized recipes but for Ground-Zero-Basics I always turn to Good Eats. :)

  • Agreed. I've learned more from this single show then every other cooking show on Foodnetwork. Good Eats doesn't just show you that ingredients go together in such a way they bring more flavor then others--but WHY they go together! To better explain: He shows the reason they work, not just that they work as other shows do.
