You consume about a teaspoon of pickle with your meal. That's it. Plus, the spices in the pickle and the heat helps digest the oils quickly. That's why Indian pickles are hot.
For christ's sake this is a pickle, stop whining...have you seen olives pickled in oil ? the same way other things are pickled in oil which is a natural preservative.

You can simply opt not to put the jaggery. It should work just fine. I've never had a hot and sweet garlic pickle, just hot garlic pickle.

In India we eat it with Rice mixed wid Dal/Sambar/Rasam.
Do not eat too much ! Just a spoonful as a side dish :)
