  • Marvellous recipe but i modified little bit - i added powdered spices(cloves+cinnamon+cardamo­m)  since the spice will come in between while eating. And i cooked marinated chicken 3/4 th and then kept for dum(steam) along with 1/2 cooked rice. All of my family members relished it.THANKS A LOT!!!!!!!!!!!!!!!!!!!!!!!!!!

  • Is there any way you could post measurements for this recipe? I'd like to make it but I don't know the ratios or quantities you've used for the rice, the water, the spices or the chicken.

    Somewhere else I saw people frying chicken and spices and make the rice separately. I don't know but I thought drumsticks would take longer to be cooked than 30 minutes...

    I cooked biryani many times and it is a very good experience.

    can you please tell me about the cooking biryani in 'degh' which chefs generally used in big progrmmes like marriage etc but I need a 'degh' of not large but a small size like 3to 4 kg rice capacity.

  • I don't normally cook and I watched your video and cook biryani it came out good. You mentioned lime on the recipe but you never used it?

  • well,cook on low heat n covered if the chicken or meat is uncooked.better to put some heat on top of the lid.

  • Oh man,..see the amount of oil he has put...he talks too much...guys while cooking rice dont add oil but ya, in a small muslin cloth, add those whole herbs like green and black cardemom, cloves, javintri, cinnamon make a small bag n let it cook with rice..oh ya, kala jeera also....see the aroma...

  • it was very good i tried n enjoyed but bottom of the chicken is burnt how 2 avoid this problem.i put it on slim flame

  • I'm not an expert....but I think you need a thick base pot for even heating. If you have one of them then I'm out of ideas.

  • CrowdControl: I didn't try it with a thick base pot. Someone also told me that u can place the pot over a pan to avoid burns. The purpose of both ideas is to have thick base. i'll try it, thanks :)

  • Dude I tried this, but the bottom chicken was burnt after 15 minutes of cooking. It was on medium flame. Do you have any suggestion to overcome this problem. Thank you

  • There is something weird about this recipe me thinks .. is it correct that the chef added the rice in uncooked chicken? I have a feeling .. that rice should be added in somewhat cooked chicken .. maybe this way .. we can eliminate the burning of chicken? What do u say? waissay Iam just learning .. so i may be wrong ..! But uncooked chicken and cooked rice amalgamation does not seem right ..

  • @DzineNoteBook It is an age old recipe of Hyderabadi Kachi Dum Biryani. The chicken is thoroughly cooked and the steam from the chicken cooks the rice as well and gives it a wonderful flavor. Try Vahchefs directions exactly and u will stumble upon the most enchanting flavor of this biryani.
