"Tasawwuf" or in western terminology sufism does not encourages dancing. This is a commercialised version of sufism as we see these days. Real sufism actually "Tasawwuf" is different and far away from most people on this globe. These dances only shows culture not sufism itself, mostly Nakhbandia tarikah encourages dancing but prominent orders Chishtyya ,Qadariyya does not encourage dancing and use of western musical instruments, even soharwardia order.
sufism originated in mekka....some believe it is connected to Ali the prophet muhammeds(pbuh) cousin and others believe from Abu Bakar....either way it is another form of islam ...the mystical/spiritual side to islam...the biggest group of sufi are called the mevlevi which are based in turkey...when they twirl around they go into a trance to clear their minds heart and soul of all bad and when the skirt goes over their head it is like being reborn and completely at one with ALLAH
but yes you are right...in egypt the goverment pay the dancers to entertain the tourists....but it is also cultural and traditional dancing in egypt and middle east...just the same as you would find in india or pakistan or any other country...they all have their cultural/traditional dances also...no matter what there religion
sufism or dervish dancers do not originate from turkey...but the ottomans(turks) when they invaded the arab lands liked so much of the riches that the arabs had and they took some of the cultural things back with them to turkey...same with some of the arabic words...the turkish took swirl dancing/sufi/dervish dancing on in a big way to entertain the tourists...but thats as far as they wanted it to go(with no religious ties)same with the belly dancing etc...this is egyptian origin(folk dancing)
