  • I like your videos the most. I have to ask you how to do some thing. I am using caned Pineapples. I want to add Honey to them, Like candied and dry them in the dryer. Can this be done? I want to use them for a trail mix and vac pack them also. Is the shelf life good if I can do this? John

  • I have watch most of your videos, and I am really impressed and inspired. I just bought a 9 try Excalibur, I missed the summer season but I am going to do the frozen fruit and veggies.   • I just bought the 9 tray Excalibur.  I could not believe how little room there is between the trays. I noticed on your video that you have every other tray out. I just now saw that. Never noticed that before. Many vegies are a lot higher and need more room. What say you?

    It is very rare that I have to remove trays to make more space for food I am dehydrating. In the video the trays may have been stacked off to the side waiting to be filled. The only time I remove extra trays in order to make more room is when I make yogurt. I'm afraid you maybe slicing your food way to thick. The space between the trays offers plenty of room and there is no need to remove trays. Hope I have helped. Tammy

  • I have a question about recipes using dried veges and fruit. When a recipe calls for "1/2 cup dried" for a soup or whatever, does that mean before or after it is rehydrated?

  • Thanks Tammy, I ended up using the 125F setting for 12hrs and the peas and corn turned out perfect, the carrots needed a little more time ( the baby carrot style ) so i am leaving them for 14hrs, thanks for all the vids and help its great.

  • I think i will cut the carrots in half lengthwise next time just to aid in the drying time, course that may prove a little dicey when they are frozen, oh well we'll give it a go. lol

  • What temp for the frozen veggies Tammy? I heard you mention approx 12 hrs and my excal only has a setting for veggies ( which I assume is for fresh ) anyways, I am trying it at the recommended temp for veggies 125F, thanks Keith.

    I find that the best temp fresh or frozen, vegetable or fruit is 125.

  • Hi, I love my dehydrator, but I am already thinking about buying another one. I got the 9 tray upgraded wiring because I felt like I would keep it on most of the time.

    Quick question, do you blanch your carrots (fresh ones) or can you just treat with lemon and dehydrate them? Thank you.

  • It is very important that you steam the carrots until tender ( bright orange color not mushy) cool with cold water or ice and spray with lemon juice.

    I have 2 dehydrators going all the time and wish I had 3. Tammy

  • everything eles we can find to use to make various soups - I have one question concerning frozen verses fresh - do the fresh veggies taste better when they are rehydrated than the frozen, or is there very little difference?

    You can't beat fresh when it comes to dehydrating. Some items like frozen corn, peas, and hash browns are far easier if purchased frozen and then dehydrated. Sorry I have taken so long to respond. Tammy

  • Hi Tammy, I'm still at it and learning more every day thanks to you! My teenagers have ranged from amused to sympathetic throughout my dehydrating adventures. I'm sure they think I'm a little crazy...every time the vacuum packer kicks into action, I hear giggles from the bedrooms. But they thought the beef stew I made yesterday was MARVELOUS. If they knew the carrots, potatoes, celery and onion were dehydrated, it might have been the worst stew ever! Should I tell them now or later? :)

  • Nubeck: I started storing food about a year and a half ago and everyone thought I was insane at first. My teenage son also laughed at me and rolled his eyes a lot. Then the market collapsed and people started asking questions and wondering how I knew it was coming. Then the layoffs started. Now, I have friends who are learning to can food with me and a lot of people don't think I'm so crazy anymore. hehe Mom's know best!

  • Amazing - how those veggies and fruit shrink down after dehydration. Thks for sharing! I noticed that you keep your dehydrators on your kitchen counter- do they radiate a lot of heat?

    I actually keep both dehydrators on the bottom shelf of the work table that I built behind me in the video. It was very easy to build and I put slates between the board on the shelf for air circulation. I don't think it generates much heat at all. Tammy

  • Do you need to store the dehydrated frozen vegetables in the freezer or the pantry?

  • You store all dehydrated foods in the pantry except meat should be stored long term in the freezer. If packed properly it will last for years and years in your pantry. That's where it belongs. Tammy
