  • Little tip for those of you actually interested in the cooking: stir in some mozzarella cheese or whatever cheese you prefer into the sauce until they melt. Most restaurants do this and it gives the sauce an extra richness.

  • I don't like this vid. When you say from scratch, it should be from scratch which means using fresh tomatoes. Not tomatoes from a can.

  • @kisstopiagroove As an ex-chef, tomatoes are one of the few things that are excellent canned...most great Italian restaurants will use quality canned tomatoes with no reservations. Canned tomatoes are also canned at height of ripening....good luck finding store 'fresh' tomatoes like that!

    Fresh tomatoes are great of course, but the blanching and peeling is a PITA for the slight difference in taste/quality.

  • @goldseth If anything is from scratch, it's made with fresh ingredients. I don't need a chef to tell me that and I'm not trying to replicate whatever "great restaurants" do in their kitchens. In my kitchen, I cook fresh and I eat fresh. I don't use anything in a can packed with salt and preservatives. Thanks for the good luck wishes, I did find a good video of Donatella Arpaia.

  • @kisstopiagroove I know what you mean- but the canned tomato sauce that Giada used in this video is made from the best tomatoes in the world- San Marzano Tomatoes found only in Naples, Italy...the only way you can get them is to order them online from Italy...she could have cut up Roma tomatoes and made it from scratch, but you really can't beat San Marzano tomatoes : )

  • @kisstopiagroove You can make this recipe with any canned tomatoes. She just happens to buy hers from Italy or an italian grocer.

  • @kisstopiagroove You should be able to buy tinned San Marzano tomatoes anywhere in the world. I am from Australia and most of our supermarkets stock them. I understand where you are coming from, but they really are amazing and don't deserve the stigma that is attached to other (highly processed and full of preservatives) tinned foods. Give them a go if you can find them :)

  • This is not good, Giada. And by the way, I'm pretty sure those are not real San Marzano tomatoes. S.M tomatoes have to have the stamp on the side of the can that states that they're from the region. There are so many companies selling what they claim to be SMT's but they're not genuine. Also, a domestic tomato grown from SMT seeds is not actually an SMT because the real thing must grow in that ancient volcanic soil. All the difference in the world. Way too many carrots and please no celery.

  • @Rendse agree with you here, but regarding the giant head, i reckon it's because of the camera lens used, and not necessarily her head. Maybe they used a wide angle lens to film this to show more of the kitchen along with her. Wide lenses tend to make peoples' heads look strangely big, especially when used at close range.

  • Soffritto in a tomato sauce? Not in a million years. Carrots and bay leaves are for sautéeing meat for ragu' not for the basic sauce. There are 3 ways to make a tomato sauce here in Italy and none of them involves canned food. #1 is the original sauce from 'Artusi' #2 is the modern version where e.v. olive oil is added after the sauce has gone through a foodmill and has been reduced #3 is the tomato fillet sauce with just garlic, oil and basil.

  • Tomato sauce isn't Italian. Tomatos were grown and cooked by American Indians for thousands of years before Columbus washed ashore in North AMerica. Tomato sauce was used by the "Red Indians" for a variety of foods. The Italians actually thought the tomato was poisonious due to it's red colour. Just another example of Europeans stealing from the "red man".

It was Hernán Cortés to bring it to europe in 1540 and it was considered poisonous (holistic medicine still does) as most of the solanum plants back then. The color was dark yellow and the taste was kind of acid till ,almost a century later, the Italians could graft what is known as a red tomato.

  • @AcrylicChique101 No. Tomato paste is very thick and condensed. It's a tomato product that is cooked for a long time to make it very concentrated. Tomato paste is just that, a paste. Crushed tomatoes are cooked, whole tomatoes that have been crushed.
