  • just a note to everyone that to get the most amount of omega 3 from this fish, you should avoid removing the skin. there is a thick layer of fat deposits that rest between the flesh and the skin that is wasted if you only eat the fillet

    this layer of fat also helps keep the flesh moist depending on the method of cooking where salmon fillets dry out easily if not seared

  • to be honest he should be using a skinning knife for that not a filleting knife. you can get away with using a filleting knife with small fish but if you look carefully on the thick end of the skin he left a fair bit of salmon on. not down to him, purely because a filleting knife is not designed for skinning fillets that big. but then again im a fishmonger so i would be abit picky about that :p

  • I myself cook the salmon first, then take out the bones ... It's twice as easy.. But i understand you can't do that in a restaurant, no time and the food gets cold.

  • I use a similar method with partially frozen salmon. Cut a slit near the tail, flip the fillet so skin is facing up, and peel the skin back. Takes all but a few seconds.

    You can also use a knife for the same method or any thin object, except don't flip the skin face up, and just push the knife away from you along the fillet. Usually you don't have to cut, just push and it will peel away.

  • I think it quite humorous how the Britons and Australians choose to say some French words with a proper French pronunciation like "ecoutrement" but then refuse to use French pronunciation on other words like "fillet". Conversely Americans say "fillet" correctly but other French words incorrectly. No wonder the French dislike Britons and Americans alike.

  • instead of wrapping the end of the skin around your finger, you can actually just make a slice in the skin that's already been removed from the fish and stick your finger through it and use that to hold on.

    just an alternate method. produces the same results.

    It's really all about the knife. get yourself a proper, and SHARP fillet knife and it all comes together quite easy.

  • Ramsay gets a little nervous infront of the camera I believe. Everybody has some type of "click" when they are infront of a camera.  Listening to how nervous he gets when going to places to sign stuff like autographs and whatever else, he even says it's nerv racking. the bouncing is just something that helps him feel comfortable.

  • This is really useful for me because the books I am using to try and teach myself cooking only show you how to bone a whole fish to get a fillet out of it. NONE of them showed me what to do with the fillet once I have it.
