Really appreciated you showing off the thickness of the batter. Worked with coconut flour once and thought I was using the almond flour. HA! did I ever produce a brick. When the baking was done and the brick cooled, I tore the brick apart and chopped it up in my food processor. I am still using the crumbs for pudding topping. No way was I going to waste all the wonderful coconut flour.
