Ghee is clarified butter but clarified butter is not necessarily ghee. Ghee has all the water cooked out of it and it is done when it stops bubbling. It has a higher smoking point also.
I would NEVER recommend a system in which you walk away and come back two hours later.
It burns quickly once the water is cooked out and then it's ruined.

Thanks for the clear presentation. Is there anything you can do with the milk solids that are left over in the bottom of the skillet?

@Alistairville You can use it to make homemade mayo. You can use it the same way you would use butter but it's more liquidy.

Thanks for this - very clear and easy to listen to. A note about Ghee - it doesn't contribute to cholesterol like butter does.
