Yeah I noticed that. Here's a theory, the bartender wears sunglasses because he is a survivor of the nightmares and is cursed with the sheep eyes that Vincent wakes up with in the morning. I think when Vincent inevitably survives with him being the hero of the story, he'll permenantly have the sheep eyes afterwards. Called it.
