  • in USA sake / mirin = RICE WINE or COOKING WINE (clear) / sato = SUGAR / syouyu = SOY SAUCE / if you find mirin? do not use much at all! so if you can not or its expensive, dont bother with it // wikipedia has some good info if you making this in the states

    now the trick is getting the right kind of fish for this dish!
