LOL! when you said you were going to fry them and just put them if flour i knew what was going to happen i did the same thing as you before. was so disappointed when they just started to fall apart on me :(.
Oh! Plus add (1 egg) to the mashed potatoes and some (bread crumbs) if you want to have them hold better. Starch will help also, but eggs, and bread crumbs add better flavor. Especially if your bread crumbs are the Italian bread crumbs. Just a tip it will make Phenomenal Potato Pancakes! :)

I didn't mention it in the video, but I used 8 Medium Yukon Gold Potatoes for this recipe.
