Looks good mate, but I reckon you oughtta marinate that chicken in that peri-peri sauce (make loads more). Then separate the skin carefully from the meat and pour peri-peri in and massage. Then let it marinate for 24 hrs at least, then cook over indirect coals at a slightly reduced temp for a bit longer. You could also slash the exposed flesh of the chook (I know, it sounds gruesome) to make sure all that lovely sauce marries well with the chook meat....voila, and enjoy!
so you sure that this free range bird hasn't been brined before? Because I heard that poultry in your supermarkets are very likely to be brined to make the thing heavier and sell for more. I'm guessing brining with your own solution afterwards isn't going to be as effective if the bird has already been brined.
