He is covering a hole with the hand holding the bottle. when he uncovers the whole, the pressure changes and the force is exerted differently on whatever material (rounded. maybe sphere) he has used that is clear and heavy enough to sink to the lowest point of the bottler.which is why when he pours it upright it works.
