Actually what happens here, if you look at the video close is the puck hitting Quick's stick then starts to flutter. The puck in rotation hits the ice at the right angle and moves laterally throgh the crease. Very similar to when you flip the puck high into the air and in some instances due to the rotation of the puck it will land and take a funny unorthadox bounce.

You can actually very faintly see the rut that it hits. The deflection off his pad must have tipped the puck at just the right angle so that the bottom edge of the puck was able to dig into the rut and then roll along the length of the rut, chaning direction.

Even if it did get slot of spin after it hit quick it still would be pretty impossible for the puck to turn at the angle it did

It's still freaky either way

if you look closely yo can see the flap on his leg pads move, which shows us that the puck had hit his leg which put spin on the puck. while the puck is spinning it most likely hit a rut caused by his skates which would be enough to cause it to riccochet as it did.

It looks like it hits his skate making it spin and when it hit the ice got some traction and shot off to the right.....my opinion not sure if it's what actually happened though
