@MsLogik408 - He's using a foam cutter. It's kind of like the electric carving knife you'd use to slice a thanksgiving turkey. They also use an angle grinder of sorts, with some type of abrasive pad, which allows for shaping. I've have also heard of people cutting foam with a bread knife.
I wouldn't suggest leather for the seat. After it has been wet, the leather will draw up (shrink).
