  • we were always shown how to do an 8 way and only once to do it this way. But in my corner stone class for my final my teacher was surprised that we didn't do it this way. Thank you for showing me an EASIER way to get the oyster out!! LOVE IT

  • This was different from what I learned. Interesting though to see various ways in how to do things in culinary. I was taught to take out the back bone first then to finish breaking it down, with 2 halves rather than work with the whole chicken. I will be trying this soon!

  • @danhouse1989 Hello, There are alot of ways to break down a chicken. This is the way I used to teach the competition team how to do it.

  • @Robb0h I remove the backbone first then pretty much seperate the breasts between the keel bone. I will try to do a short video on it for you.

  • i've been looking for a refresher on how i learned in school, this, out of way too many videos is the way i learned. excellent demonstration/technique. looking forward to your other videos now.

    on another note, the camera sometimes gets in the way of what you are showing--maybe a tad bit too close at times....otherwise, thanks for sharing!

    i am in grade nine and have started cooking on a team. what we had to do is green beans almondene` maple glased carrots , parsnip pure, risotto millinese, and duxelle stuffed chicken brests. and i will be going far. i have done my first 2 comp`s this year and am hoping to move on do you have any tips for a noob like me email me on here kk bye.

  • Thank you, Chef. You're Knife Skills episodes, as well as this one have helped me with some basic skills. That arrow trick with the wing is awesome. Soon I will be taking my ACF certification for Culinarian and I hope you will do some more basic skills videos! You make learning fun!
