This was different from what I learned. Interesting though to see various ways in how to do things in culinary. I was taught to take out the back bone first then to finish breaking it down, with 2 halves rather than work with the whole chicken. I will be trying this soon!
i've been looking for a refresher on how i learned in school, this, out of way too many videos is the way i learned. excellent demonstration/technique. looking forward to your other videos now.
on another note, the camera sometimes gets in the way of what you are showing--maybe a tad bit too close at times....otherwise, thanks for sharing!

What about if you want "bone in" breasts? Any tips on where to cut the back/ribs? I always manage.... but it isn't pretty!

@Robb0h I remove the backbone first then pretty much seperate the breasts between the keel bone. I will try to do a short video on it for you.
