That's done by pressing the 'A' button, after defeating an enemy.

(On the GCN version, anyway. I haven't a clue how to do it on Wii.)

Some enimes you can do that. Big ass spiders, the deku plants(big and small), small ogre with the clubs (Bokoblins), and bosses do that automatically.

You can do that on the Wii by standing still and pressing 'A'
