Do you prefer store bought catfish, or do you like them fresh from the water, and would catfish nuggets (which is cheaper in our area) work just as well as fillets?

Finally, can you use something else to coat the fish other than potato starch (which is hard to find where we live)?

@paulnkiki Yes, China has lots of catfish (mao yu). Fresh fish is always better if you catch it, but buying frozen fish in the store is better than the store's "fresh" fish because the frozen fish is "Flash Frozen" right when they catch it, so it is actually better than a dead fresh fish that has been sitting around in the store for who knows how long. Sure, you can use the fish chunks. It will taste the same and you can also use corn starch or even flour if you don't have the potato starch.
