Hello!!!!!! At my school cafeteria, I love that Chili Frito Pie, it has fritos, chili w/ meat and cheese in it. I would make that when I have a church picnic, a birthday party, or a BBQ!!!!!!!!!
I loove onions but I can only eat them in small amounts. My daughter and I have referred to your recipe videos when we have a question about a traditional recipe. And we have learned many new recipes from you. We dont even need a cookbook. We are making enchiladas tonight inspired by your recipes. Frito chilli pie has been a favorite of mine for over 30 years.

Hi Betty! Just wanted to let you know that I made this last evening for dinner and it was a big hit! my husband loved it! I took your suggestion and used a half of an onion and I served it with lowfat sour cream and jalepeno slices on the side. It was so yummy and easy! This is the second recipe of your's I have tried so far and they were both winners! My husband and I will be married 5 years in October and I can always use new recipes to add to my collection! I <3 my Granny"s frito pie which is made similar to yours but she uses ground beef and then adds a can of chili to it along with onions, and she layers it with fritos then the meat mixture, next velveeta cheese ONLY lol, and finally a little bit more onions but i like your version aswell!

@neurotic666 I'm from Canada and we don't have Frito's but we do have corn chips. Frito's is just the brand name for corn chips. You MUST have corn chips in the UK. They're just those corn chips that look kind of like some disgusting and long fingernails, lol. Every civilized country has corn chips! (or maybe you call them crisps in the UK, not sure if that just applies to potato chips or not.)
I made this last night and it was AMAZING!! Definitely making this again for the big New Years Eve party. I just use the recipe like a party dip in a large flat pan and I used giant scoop chips for people to use to scoop up some of it onto their plate. 100 out of 5 stars lol

OH Betty, we call this "Pepper Bellies" where we come from they actually serve this casserole at my childs school for lunch! and I can vouch the kids LOVE it! and so do we hehhehee.. so Pepper Bellies is what it is called. Thank you so much..:)
It seems like it might be a tad dry. I find Campbell's canned mushroom soup is a really versatile ingredient for casseroles - I'd bet 1/2 a can would be a good addition in this recipe, or even a whole can (used concentrated / undiluted), if you removed out half the cheese (and that would make it more economical too - that Velveeta block is not inexpensive!).
How about adding the onions after the chili layer? I think the amount you used should taste yummy because I love onions!!! I think with a heavy protein (processed) like canned chili, the onion should blend well!

Betty - my husband likes to cook for me once a week, but he isn't the "chef" in the kitchen. He found your youtubes and made his christening recipe tonight - THIS wonderful dish! We did scale back the onions, but decided next time we are going to heap them in there! (We LOVE onions!) He will be cooking through some of your other recipes as well! (by the way, it was YUMMMMMO)

I just don't understand this recipe as a stand alone dish. It doesn't seem very nutritious. If you added pintos to the chili it might give a bit more nutrition in the form of protein, iron, magnesium, phosphorus, calcium, vitamin K etc. You could also add some sauted bell peppers and chili peppers and even corn and tomatillos for even more nutrition.
Betty I just had a great ieda. To avoid the "too much onion" issue, I think when I make this dish that I will leave the onions out all together and any Adults or if there are some kids around that like onion - I will chop 1/2 onion and put it in a side dish and they can spoon their own onions on. That way the non-onion eaters can't complain they got a onion ; Sound good ;)
That looks good. I do agree with U tho that an entire onion is too much. I think when I make that I will probably only use 2 Tbsp of onions because sometimes there little kids tha would luv that dish, but not the onion. Maybe I can pull that dish off around little kids with only 1or2 Tbsp's of onion.

I made this for a party in work, I made it in a long Pyrex Lasagna dish, I took your advice about the onions, I used small white onions coursly chopped, about three and I quartered and diced two medium Avocado's and used them for one layer in the middle! I also added one can of black beans in addition to the Velveeta, chili and corn chips, the Avocado and the beans gave it a true Tex-Mex flavor, they woofed it down in work! Great recipe for parties!

Betty - my husband likes to cook for me once a week, but he isn't the "chef" in the kitchen. He found your youtubes and made his christening recipe tonight - THIS wonderful dish! We did scale back the onions, but decided next time we are going to heap them in there! (We LOVE onions!) He will be cooking through some of your other recipes as well! (by the way, it was YUMMMMMO)

I just don't understand this recipe as a stand alone dish. It doesn't seem very nutritious. If you added pintos to the chili it might give a bit more nutrition in the form of protein, iron, magnesium, phosphorus, calcium, vitamin K etc. You could also add some sauted bell peppers and chili peppers and even corn and tomatillos for even more nutrition.

Betty I just had a great ieda. To avoid the "too much onion" issue, I think when I make this dish that I will leave the onions out all together and any Adults or if there are some kids around that like onion - I will chop 1/2 onion and put it in a side dish and they can spoon their own onions on. That way the non-onion eaters can't complain they got a onion ; Sound good ;)

That looks good. I do agree with U tho that an entire onion is too much. I think when I make that I will probably only use 2 Tbsp of onions because sometimes there little kids tha would luv that dish, but not the onion. Maybe I can pull that dish off around little kids with only 1or2 Tbsp's of onion.

I'm sorry Betty, but using Velveeta is a travesty.
It is not cheese.
Good cheddar {as you mentioned} is in my opinion the only way to go.
That being said, I think you are brillant and have enjoyed watching your clips.
I'd even go so far as to call you "The Queen Of Comfort Food".

thanks betty! I'm originally from germany and i'd never heard of frito chili pie but my boy friend who is very american asked me to make him some. i found your recipe, used my own home made chili and he LOVED it! He's so sweet. And so are you. So now your challenge, make a nice saurbraten with the ingredients from an american grocery store.

I made this for a party in work, I made it in a long Pyrex Lasagna dish, I took your advice about the onions, I used small white onions coursly chopped, about three and I quartered and diced two medium Avocado's and used them for one layer in the middle! I also added one can of black beans in addition to the Velveeta, chili and corn chips, the Avocado and the beans gave it a true Tex-Mex flavor, they woofed it down in work! Great recipe for parties!

Oh; avocado is such a good idea and sounds so good!
This is what I do: I get a can of tamales and cut them up for one of they layers. It's wonderful.
I also sometimes put a dollop of sour cream on top of each serving after it has baked.
