Me and my buddies would come back from Hotel don Tico (whorehouse) in Jerez at about 2am. I used to love the tortilla bocadillo at this little hole in the wall restaurant. I used to put Ketchup on mine and the little old lady would look at me like I was insane. Have been trying to cook one of these for a long time. Gonna' have to try this method.
@JonE23 Frittata is the Italian version of tortilla española. "Tortilla" in Latin America is a flatbread usually made from corn flour and doesn't really have anything to do with European Spanish cuisine.

A simple and effective trick to cook your omelette well is to simply put a lid to cover your pan. And add shredded mozzarella on top of your omelette too.

@10cookman Marco gave his stars back a long time ago, same with Nico Lidenis Dillegard in Holland did as well and not too long ago either. So did some other French restaurants in the past couple of years. He's not even in the business for Michelin stars anymore dude. Come on now, he owns pizzaria's and steak houses. Those are far from Fine Dining. Michelin is strictly for fine dining and to say that fine dining is the only dining is ridiculous. But this is the same here stock cubes on tv.
