  • @keyeonie why the name calling? it's just not my taste. plastic decoration is not edible and it doesn't look nice. I'd rather use something that adds to the plate. that's just my opinion. please respect that.

  • japanese sushi and sashimi chefs are really artist, i love watching them preform thier craft, and definatly enjoy eating it.

  • @joshyperksss Turns out I am a sushi chef. And I never said they aren't talented. I'm sure they are. All I'm saying is that the plastic looks shitty on a plate with beautiful fish and that there are plenty of cheap and more elegant alternatives to plastic.

  • @Johnstern22 oh for the second and third things you said. You might be thinking of Nori which is the wrap that we (we meaning sushi chefs) use to make maki sushi (rolls). Nori is not dried seaweed but made from dried algae. Third, I have had dried seaweed before. I had it in miso soup which has wakame in it. Wakame is actually dried seaweed.

Imagine having to do 200 of these a day before your sushi place opened and the use in sushi is to not have things touching on another they are just pretty borders. A few seconds? You're pretty good with a knife if your pulling good ones out in a few seconds

    I work in a hotel...kitchen and restaurant is divided per department

    Cold kitchen is a department which takes care of all salad, fruits,canape' , some creative fusion sushi, amenities for (VIP/ Regular) guest, as well as Banquet functions...

  • no offend but this isnt that great...for sure it can be done even in less that 2 min.I saw every thing was prepared and already cut. I can do it in 10min tops..double the amount and still have to cut it on the spot plus no plastic leaves garnish...
