Viewer longtail4711 asked about keeping the turkey and you mentioned you put it in ice water with salt for the first night and then in the fridge. Canadian thanksgiving is just one week away. My questions are: how much water and how much salt? Is it soaking in a plastic tub? How many days will it keep in the fridge? thanks again for mentoring!

The weight streches the neck so the blood won't fly everywhere. The bird will try to lift its head and that is just cruel. You can't chop it's head off when it is upsidedown. Good video - never saw it done with a weight before (we only did chickens) I have seen a video where they used a large open ended cone to hold the birds when they killed them to keep them from flopping all over:)
The reason for the weight is it holds his head straight down otherwise the bird would hold his head up and not bleed properly and then the blood would go everywhere. At least I can control the majority of the bleeding by the weight and holding the wings. ---Thanks for the response, any other questions , email me. :)
The main reason you don't let the bird flop around is the meat bruises easy. Hanging upside down drains ALL the blood to one central area. This is the most humane way of butrchering without damageing the meat.

We used to chop the head off cleanly. The heart continutes to pump out the blood. When it stops flopping we'd hang them upside down to continue draining the blood. There was never any blood in the meat like you see in commercially slaughtered birds. With respect, I find this method unnecessarily cruel.

@SaviourSole the reason why you bleed them like shown, is because the death is near instant, but not so catastrophic that the heart stops beating immediately. this allows the heart to pump all the blood out of the carcass. also despite the way it looks, it's actually much less painful for the bird. i've never seen the wire method for weighting them down. what i've seen is a noose that's hung over the birds neck, and just as soon as its tight, the cuts are made. hope this helps
@debi5058 first of all you prude, i'm laughing at how the turkey was giving the guy a hard time. second of all, i'm sure this turkey did not suffer his or her whole life prior to slaughter. This is how my family butchers our chickens and turkeys every year... the only difference is we never torch the pin feathers off until I've gutted them.. because I find that torching tightens the skin up, and especially with smaller chickens, putting my hand inside to gut them makes the skin tear all along the thighs and alongside the breast. Waiting until after they're gutted ensures that hardly any skin tears. Just my two cents. ;)

Just finished my turkey kill. Thanks for preparing me for that sheer strength of that bird when it convulse. Even being prepared, I held it tight but keep losing grip. Since it's my first kill, I'm surprised I didn't gag or vomit while gutting it. For some reason I feel like I was in the store bought turkey mode while touching all those icky parts. I guess that works for me.

@toddlohenry --Thanks for the positive----:) You make a cut above the tail to the tip of the breast bone --make a circular cut just big enough to put your hand in-- then everything else is a piece of cake :)

I went after a wild one this year, and while I called one in, I never shot... I thought about raising em, but Im sure they are loud, messy, mean, etc? Ive had only meat rabbits and cats and dogs... Never turkeys.
@TheMrsVolfie -- Well it's like this-- It's hard enough to get a rope around the feet let alone the whole body. Also if you can't hang onto the bird the weight in the mouth will go wild from the birds nervous system. You will really be surprised how strong those birds are. If there is a easier way, believe me I would be doing it. Thanks for your comments any more will be more than welcome.
@TheMrsVolfie It is very tough to do because the bird won't stay in one place for long.. A person can tie them if they are able to do. That is the way I've always done it-- Working on my pecks :)

Why do you not wrap a bungee cord or rope around the bird confining the wings from flapping?

@TheMrsVolfie -- Well it's like this-- It's hard enough to get a rope around the feet let alone the whole body. Also if you can't hang onto the bird the weight in the mouth will go wild from the birds nervous system. You will really be surprised how strong those birds are. If there is a easier way, believe me I would be doing it. Thanks for your comments any more will be more than welcome.

@TheMrsVolfie It is very tough to do because the bird won't stay in one place for long.. A person can tie them if they are able to do. That is the way I've always done it-- Working on my pecks :)
