With apologies, you say you are a purist, but you put lemon juice and pepper on the oyster. A chacun son gout, I suppose. I grew up in one of the best oyster-producing regions of the planet, Morbihan in Brittany. All you need are the oysters, Muscadet de Sevres et Maine (NOT ordinary Muscadet, too sweet!), and baguette with sweet Breton butter. No need for lemon or (shudder) cocktail/hot sauce. Eat them with nothing else, or don't eat them at all.
