Not all of Spain does this - Look up Recortes, it is the spanish sport in which men are chased by bulls and do many stunts and tricks with them, such as jumping over them. What you see in america originated with the recortadores.

There job is to sever the tendon that runs along the back of the bulls neck. to do it they use a sharp knife on a long spear, and stab it into the bulls neck until its head drops. They do this so that the bull cannot pull its head up in case the bull fighter gets hit.

I have two things to to say about the Corrida.
1) Better for the bull to die in the ring, noble and in battle as it were, then in some beef factory.
