  • Found out you might want ur egs room temp, bc if you add cold eggs to warm cream chse, it makes cream cheese lumpy, but you dont taste it when u make the pancakes.

  • Hi Julie, I just tried to make this recipe and failed miserably- and it looks so simple-and I bake all the time! How did you get them to be so circular and puffy?? mine spread out over the pan and then are thin and nowhere near as beautiful as these. I also used a different cream cheese since Philadelphia is hard to come by in Israel. It was just not good all around..I want to try again, but there must be a secret as to how you got the shape and consistency like that?

  • Doesnt matter what brand of cream cheese. Its the same. My first batch came out lumpy. 2nd batch took cream cheese micro'd it in bowl for 30s on defrost. Then creamed it w/beaters b4 adding dry ings. Mix will thicken if you let it sit for 3-5mins. Ate mine w/1/8th cup of frozen blueberries cooked 3mins in Micro/add 1 stevia pck. Blueberries have a lot of juice. I also used pinch nutmeg/allspice. I used vanilla stevia instead of syrup in mix. Didnt have syrup. It was like eating fr toast.

  • @borigitana: Just found out keeping batter in fridge overnite, it wont thicken more. The trick to making the pancake rise (a little) is to make sure ur pan is hot enough on med. I didnt wait long enough, & they flattened out & became mini crepes. A slightly lower temp might make 1-2 nice big crepes tho. Then put in 1/4cup frozen blueberries micro'd for 2min then add ur sweetner. Its amazing that way. I tested 1/8th first to make sure I didnt gain b4 increasing amount.
