I read somewhere that the Director, David Fincher intentionally had him only be shown getting struck by lightning, 6 times because he says in one scene that he can't hardly hear, always losing his train of thought. So he didn't show the 7th because he was senile and so was only probably struck 6 times all along.

To answer your question, even with the shot of him getting struck by lightning at the "curtain call" of characters at the very end, you still only see six times. I just watched the movie with the director's commentary, and he states that they only showed six of the seven times in the film, and though they filmed a seventh, it disappointingly "was not available as an Easter egg" in the special features. Also, he says the actor playing this character died just a few months before the movie opened.

To Pyrobunny- Lightning actually comes from the ground. Well, actually it comes from the sky and the ground it's just the lightning coming from the ground is going a heck of a lot faster. If you pause it you can see lightning above him too. He just happened to be between the ground and the sky in the wrong place I guess.
