Very cool technique and video, but I will agree, you need to sharpen that knife up a bit. Steeling that hard will destroy the edge, and scraping the blade on the cutting board will destroy the edge. Thanks for the video!
@AESamuel Slowly is the key when learning this. Keep your other hand as far back as possible and use a back and forth motion with the cleaver so you are not using a lot of forward pressure in case the blade slips. After a while you will get the hang of it. You may go through a few carrots but that is half the fun. Good Luck and let me know how you do!
