One screen cast that I am really looking for is how to use coredata the long way. The easier way is to create a class and select Use Core Data....

How do I do it from scratch. The class was not originally created using the core data but if I want to save data using a data view.... all the tutorials assume you are creating the class with that check mark.

You've got memory leaks... you should instead alloc (and release) the string somewhere else so its only done once.
