i know foods with an acid in it can stain a knife, but what about foods with a base? can they stain as well?
i don't trust my judgement on how dull a knife has to be to not cut u, because one time i knew for a fact the knife was too dull to cut, but cut it did, it was just a small scratch, but the point was proven

Nice and informative video! At the same Dutch knife show, the DKE, Is bought a folder like that but with olive wood. I have been using is quite a bit and it holds up very well. Good steel and heat treat. Great value for money.

As I have said before, thank you for introducing another wonderful knife compant to many of us. Glad to see you are back and, I hope your Mac didn't cost to much to get repaired. Also a quick question and request. You wouldn't happen to have a knife from the Japanese company "Rockstead." If you do would you do a review of it.

I do not have a Rockstead knife but I did examine them at a knife fair. They are incredible indeed. I might include them in a knife show impression video, if possible.
Great Review! When we visited Solsona we stumbled upon the knife factory/museum/shop Pallares and we bought EXACTLY THE SAME TWO KNIVES. The kichen one I used for dinner tonight, yes they do stain a little but they don't rust. And they stay sharp as hell. At the factory they have knives, scissors, tools, etc. Prices are the same as in the Netherlands, 8 euros for the kitchen knife. Solsona is boringly-quiet little town, Girona is better. Had fun going to Spain to buy ours.

Enjoy them, I think these are two products with soul, something rare in modern production cutlery. And of course, any excuse is good to visit Spain. Wonderful country.

@hadleyjack Thanks all for the friendly feedback. Next to holiday my Mac was in repair over a month, hence the delay. Unfortunately it's still not fully fixed: the graphics chip crashes when it heats up. It took me three attempts to upload this clip. I do hope that the next fix (under warranty if the previous repair) will be quicker! Another video (a book review) is also ready.
Thanks a lot for the video I really really want that kitchen knife. I would probably buy a few and give some to family. I think a kitchen knife is an excelent gift because it will be used and everytime they pick it up they think of you. -Vincent
