it's easier to see at 3:21. Look at the horiz rope and then a curl around the left rope. Then another Horiz, then another curl around the left but then 2 horizontals, and then 2 curls around the left rope.
I've seen it too but caught it right after 2:05 where the left end that was about to be woven laced over the other end instead of under. I'm sure JD had seen it too but did not want to redo it or maybe he didn't. I know it was not intentional though. I've made my fair share of mistakes and not caught it till I was completed only to find out I had to take it all apart again to the point of error. That is if it was for sale.

I could see it work as a toy. Sites also sell the knot online as a key chain and tether for knives.
