Hard to describe, but the best way is just to try it!
I've been cooking spicy soft tofu soon with pepper paste (bought in market) instead of pepper oil, and it doesn't taste like the ones they serve in restaurants... is that why?
because pepper oil gives good unique spicy flavor to the soup.. you can just fry some hot pepper powder in heated and generously oiled pan to make own pepper oil.. try it someday..
i have that pot at home...i don't really know how to use it though. I'm assuming we can use it over a gas stove right? or is that bad for that pan/pot you are using?

You can use the pot you have. Yes.. red pepper flakes give red color..but also spicy flavor.. the special point for this dish is.. the extra soft tofu... so I want recommend you try that... not other tofu..but if you can't find right kind tofu.. you can try other tofu you have also..

if you skip beef and clams.. you will lose some flavor from them.. you can add broth stock powder type thing instead..

Thanks for the recipe. This one is better than the other ones I've seen.
Some other ones have potatoes in them, so it's not real.
This recipe is more traditional and authentic.
