well my kichen scene isnt al that good i have a little steak knife that has a fairly straight edge and i cut on plastic cutting board, sharpen the knife but is stainless steal 2 meals later and it needs another sharpening, makes due though
I'm having a hard time convincing the wife that a $130 forged german 10" chef's knife is worth it when our knife set was $90. The only knives I use out of that set are the 8" chef's and the pairing. I'm a big dude and the 8" chef's is fairly small in my hands. I did get myself a nice 24x18 maple block cutting board, though.
@andrewt248 Shun Classic 10 inch chef's knife, I promise you won't be disappointed and neither will she. Take good care of it and have it professionally sharpened and it will last you forever.
when he starts the chef klaus wolfgar thing which is hilarious but i cant help but think that the little music in the background sounds pornographic lol
Marble & Granite are stones, and stones will ruin the knife edge beyond repair... Composite Countertops (think Formica) are surfaces that if scratched (which will happen with a knife), it easily becomes a haven for bacteria and a source of cross-contamination.... Metal on metal not only isn't pleasant to listen to, but it'll shave small bits off and you'll get them in your food...
Glass cutting boards are a combination of all the things wrong with marble, granite, metal, and composite. Also glass provides no traction, meaning the food can easily slip causing an injury and knife control goes out the window, also causing an injury. Hope this helps!
Yeah! And those German Stereotypes always give me the giggles! No offense to Germans, whom are surely nice people BUT HEY, I get a kick out of dorky faux-German jokes! My sister's married to a German & he can't stand me...so I laugh at silly German stereotype jokes at his expense! Let's grab some of "Chef Klaus' Kutzu-Knife-Porno-Muzak" & pair it with gross-out German Porn! I've heard about it. It's like "Tub-Girl/Max Hardcore" awful.
Actually, Alton & Co. ate some KUTZU.....ahem.....I mean Kudzu on an installment of the first "Feasting On Asphalt". Where I live, the stuff's all over the place! Forget GODZILLA! KUDZU is the big Japanese Lifeform Invasion! Fortuneately, if it isn't sprayed, it's edible! Too bad noone's taken advantage of that.
Of course, the other Japanese (or Asian) Invasion, Animanga & Better Built Vehicles I dig. Of course the latter is 'Built in America' while the American is built foreign. Go figure!
"NEIN".....Wewwy Inteerlestink, ahnd Geroinmind(German). "Sthewty-Nein-Neinnddy-Nein"! (Add flying spittle & snot here). You should check out the "Faux-German" in the movie "The Great Dictator" with Charlie Chaplin! I peed myself laughing at Chaplin's "Hitler Speech" impersonation! What magnificent satire! Charlie was a genius!
To those who are German reading this. Please don't take any of this the wrong way. You're fine. In fact, I'll bet there's a load of you making idiotic jokes about American accents. I'm just being a goofball, here! And YES, I know most of you ARE NOT NAZIS & you HATE that part of your history! So don't gripe!
considering how highly magnified that picture is the chip probably isn't all that big, but as a cutlery enthusiast it's like nails on a chalkboard to me

I'm guessing the person who disliked this sliced his fingertip while using a Ginzu.
I love how in-depth Alton Brown goes in the chemistry and making of food. He truly is a scientist in the kitchen.

What about infomercial knives that are guaranteed never to go dull?
tubeviewerX20 1 year ago
They're bullshit, just like Alton said. They're infomercials. Of course they're "guaranteed" to never go dull.
By the way, if you watch carefully the TV turns off a split second before he presses the button on the remote.

Eh, I though I should post these, I am in a cooking class with alot of fancy names for cuts, here they are :)
Fine Bruinose: 1/16" cube
Brunoise: 1/8" cube
Small Dice: 1/4" cube
Medium dice: 1/2" cube
Large dice: 3/4" cube
Rough dice: 1" cube
I guess this might help someone with a fussy french recipe that calls for one of these :)
