  • well my kichen scene isnt al that good i have a little steak knife that has a fairly straight edge and i cut on plastic cutting board, sharpen the knife but is stainless steal 2 meals later and it needs another sharpening, makes due though

  • I'm having a hard time convincing the wife that a $130 forged german 10" chef's knife is worth it when our knife set was $90. The only knives I use out of that set are the 8" chef's and the pairing. I'm a big dude and the 8" chef's is fairly small in my hands. I did get myself a nice 24x18 maple block cutting board, though.

  • @andrewt248 Shun Classic 10 inch chef's knife, I promise you won't be disappointed and neither will she. Take good care of it and have it professionally sharpened and it will last you forever.

  • Ruins the knives, the foods, or both.

  • Marble & Granite are stones, and stones will ruin the knife edge beyond repair... Composite Countertops (think Formica) are surfaces that if scratched (which will happen with a knife), it easily becomes a haven for bacteria and a source of cross-contamination.... Metal on metal not only isn't pleasant to listen to, but it'll shave small bits off and you'll get them in your food...

  • Glass cutting boards are a combination of all the things wrong with marble, granite, metal, and composite. Also glass provides no traction, meaning the food can easily slip causing an injury and knife control goes out the window, also causing an injury. Hope this helps!

    Fine Bruinose: 1/16" cube

    Brunoise: 1/8" cube

    Small Dice: 1/4" cube

    Medium dice: 1/2" cube

    Large dice: 3/4" cube

    Rough dice: 1" cube

    I guess this might help someone with a fussy french recipe that calls for one of these :)
